     Chow Mein

Ingredients
1 ½ cups Chinese egg noodles
Sesame oil
1 clove garlic
1/2 tsp. grated fresh ginger
1 1/2 cups bean sprouts, washed & drained
8 green onions, cut into 1" lengths
1/2 red onion
2 stalks celery, cut diagnol 1/2" pieces
1/2 cups chicken broth
 
2 tbls. soy sauce
2 tsp. cornstarch mixed w/ 2 tbls. cold water
1/4 cup sesame seeds & toasted almonds

Instructions
Do NOT soak noodles! Bring a large pot of salted water to boil & add noodles. Cook for 2 to 3 min. Drain immediately & rinse with cold water; drain thouroughly. Allow to air dry for at least 30 min. Wash & drain sprouts
Heat 2 tbls. sesame oil in large skillet & when hot, add a handful of noodles. When golden, turn and fry other side. Remove to paper towel lined plate & keep warm. Repeat with all noodles, adding oil if needed
Heat another 2 tbls. oil in skillet & fry garlic & ginger; add green onions, celery, sesame seeds & red onion. Saute for 1 min. Push all to one side
Add broth & soy sauce, bring to a boil, then stir in the cornstarch mixture; stir until mixture boils & thickens. Mix in the vegetables until sauce coats well. Add the sprouts, toss & serve over noodles.
