Preheat oven to 200 degrees. Heat a waffle iron on its highest setting. In a salad spinner, combine the potatoes and onions. Spin for 1 to 2 minutes to remove as much liquid as possible. In a large mixing bowl, combine mixture with oil. Divide into 4 equal parts. Brush each side of the heated waffle iron with about ½ tablespoon melted butter. Add 1 part of the potato mixture to the iron and spread into an even layer. Close the iron and cook for 8 to 10 minutes. Remove the potatoes to a cooling rack and add salt and pepper. Hold in warm oven. Repeat with remaining portions.
