     Balsamic Butternut Sauce

Ingredients
3 c butternut squash (1 medium), cubed to 1 inch pieces
2T olive oil
1 tsp. salt
1/2 tsp. pepper
1/4 c balsamic vinegar
2T maple syrup
1/2 c water
1T fresh thyme leaves, minced
 

Instructions
Toss squash with olive oil, salt and pepper and lay out in even layer on rimmed baking sheet. Roast 15 min.
In medium sauce pan, combine roasted squash, balsamic, maple syrup, sage and water. Cook over medium-high heat until mixture comes to a boil. Reduce heat to low and simmer, uncovered, 15 min., until sauce reduces by 1/3. Remove from heat and allow to cool 10 min.
Puree with stick blender and season with additional salt/pepper to taste.
Serving Suggestions
Great on Roasted Chicken or Pork OR mixed into cooked risotto, pasta or polenta
