1 cup plain wholemeal flour
|

1 tablespoon baking powder
|
|
1 teaspoon ground mixed spice
|
|
pinch of salt
|

1 tablespoon light soft brown sugar
|

1 egg, beaten
|
|
3/4 cup milk
|
|
1 tablespoon margarine, or sunflower spread, melted.

1 apple, peeled, cored and chopped
|
|

Instructions |
|
|
preheat oven to 200 C.
place the flour, baking powder, mixed spice and salt in a bowl and mix well.
|
|
|
In a seperate large bowl,
mis together the sugar, egg, milk and margarine, then gently fold into the flour mixture- just enough to combine them.
|
|
|
divide the mixture between 9 muffin cases.
bake in the oven for 20 minutes or until risen and golden brown.
transfer to a wire rack to cool.
