Peel potatoes, cut them into medium to small size cubes (doesn't have to be perfect)and rinse them. Place the potatoes in large stock pot and boil until tender. Boil your eggs until they become hard and place them to the side. Once the potatoes are done, strain them and place in large mixing bowl.

Add the Goya adobo seasoning to taste. Add your 1/2 packet of the Sazon, the 2 tbs of the sweet peppers, black pepper to taste, 1/3 cup of white sugar and the Mayo. I usually add about 3 scoops of large serving spoon size. If I need more I will add a little at a time.

Before you mix all the ingredients, make sure to take peel and rinse the hard boiled eggs and then chop them up into small pieces yolk and all and add that to the potato salad. Once all ingredients are in, just mix making sure all the potatoes have been covered well. You can serve as is or wait for the salad to cool down.

In my house we like our potato salad seasoned well, and no colder than room temperature. The Goya ingredients are found at the local grocery stores usually in the international food section.
