In a large nonstick skillet, heat oil over medium heat. Add carrots and cook for about 5 minutes until softened. Add ground meat to skillet. Cooking (stirring and breaking up meat) until the meat is brown and cooked through, about 7 or 8 minutes. Stir in the tomatoes and bring to a boil. Reduce heat to med-low and simmer for 15-20 minutes.
