     Susan’s MINI Quiches

Ingredients
½ cup of unsalted butter (1 stick)
10 eggs
½ cup flour
1 tsp. baking powder
1/4 tsp. salt or to taste (chilies have a lot of salt)
1 package (10 oz) frozen chopped spinach thawed
1 can (8 oz) green chilies seeded and chopped (buy them that way if you can)
16 oz fine curd cottage cheese
½ lb. Cheddar Cheese shredded
 
½ lb Jack Cheese shredded

Instructions
Preheat oven to 400 degrees. Don’t let oven get too hot. I spray MINI muffin tins with PAM. You can use regular muffin tins but I like the MINIs. Easier to pick up and eat.
Beat eggs in a large bowl. Mix in flour, baking powder and salt. Squeeze thawed spinach very, very dry and add to egg mixture along with butter (melted), chilies and cheeses.
Spoon mixture (one large tablespoon) into each muffin grove. Bake 15 minutes (check carefully if using MINI muffin tin or if your oven gets real hot). After 15 minutes (or less), reduce heat to 350 for just a few minutes more. Watch so they don’t burn or get too brown.
Put in individual cupcake cup papers when cool to serve. ENJOY!
