     Twice Baked Potatoes

Ingredients
4 large potatoes
4 tsps. butter
1 1/3 cup grated Swiss cheese
1/2 tsps. caraway seeds
4 tsps. dry white wine
2 tsps. cherry brandy
1/2 tsps. minced garlic
1/2 tsps. salt
 

Instructions
Preheat oven to 425°F. Scrub potatoes & dry. Rub each potatoe with 1 tsp. butter. Pierce potatoes with a fork. Place in a baking dish & bake 55 min. or until tender. Let cool.
Place Swiss cheese & seeds in a small bowl; toss
Horizontally cut off top 1/3 of potatoes. Scoop out potatoe from bottom sections, leaving 1/4" thick shell. Place scooped out potatoe in large bowl (keep shells). Add potatoe from the potatoe tops to the bowl; discard the top skins.
Mash potatoe until smooth. Add wine, brandy, garlic, & salt. Mash to blend; stir in cheese mixture. Mash lightly. Spoon Swiss cheese-seed mixture into potatoe shells Place filled shells in baking dish; bake until top is lightly browned & potatoes are heated through, about 20 to 25 min.
