1 cup reduced-fat cheddar cheese, grated and divided
5 cups potatoes, peeled, diced and boiled until tender and cooled
Paprika, for garnish
Instructions
Preheat oven to 350 degrees. Spray a 2-quart baking dish with
non-stick cooking spray and set aside.
In a large bowl, combine cottage cheese, sour cream, scallions,
garlic, salt, pepper, and 1/2 cup of the cheddar cheese. Add
potatoes and coat with creamy mixture.
Pour into prepared dish and top with remaining 1/2 cup of cheese.
Sprinkle with paprika. Cover dish and bake for 20 minutes.
Uncover and bake for another 20-30 minutes, or until bubbly and
lightly browned.
