Mix lime and water, and add watermelon rind. Soak overnight. Wash rind next morning in clear water. Mix 1 cup salt to one gallon water. Boil rind 20 minutes. Drain and wash well. Then boil in clear water for 45 minutes. Drain well. Make syrup mixture, boiling for 5 minutes and pour over rind. 2nd day-Drain rind. Heat syrup to boiling and pour over rind. 3rd day-Heat rind in syrup to boiling and jar.
