1/2 cup milk
1 10 oz pkg frozen chopped broccoli (or more)
1/2 lb Velveeta cheese, cup up
1 1/2 cup cooked rice (Minute Rice makes this easy)
Instructions
Saute onion in butter. Combine with remaining ingredients in a greased 1 1/2 quart casserole dish. Bake at 350 degrees for 30 minutes. This can also be made with chopped zucchini or fresh broccoli but lightly steam before adding to other ingredients.
