fry prosciutto in 1 tbsp oil in large saute pan over medium high heat until crisp, 2 min. add chicken and sear on both sides, about 3 min per side. transfer chicken and ham to plate.
saute mushrooms, onion and peppers in 2 tbsp oil in same pan over medium high heat until softened, 4 minutes. stir in garlic, oregano and pepper flakes; cook 30 seconds.
deglaze with wine, scraping bottom of pan. simmer until wine is nearly evaporated. add tomatoes, crushing slightly, and bring to boil. return chicken and ham to pan, reduce heat to low, cover, and cook 10 min. stir in parsley.
