     Spiced Pork Tenderloin with Maple Chipotle Sauce

Ingredients
2 pork tenderloin
1/2 tsp salt
1/2 tsp thyme
1/4 tsp nutmeg
1/4 tsp cinnamon
1/8 tsp. cinnamon
1/8 tsp. black pepper
1/8 tsp. all spice
2 tbsp. olive oil
 
1 large zip lock bag to marinate

Instructions
Combine the spices and sprinkle evenly over the pork. Marinade for 3 hrs.
Instructions- Preheat the oven to 375 degrees. Remove the pork from the pan and drizzle with the olive oil. Bake x 30 minutes or until internal temperature reads 170 degrees. Remove from the pan and make the sauce
Sauce- 1 7 ounces can chipotle chilies canned in adobo sauce. 1/2 cup maple syrup 3 tbsp sodium free chicken broth 1.5 tsp. cider vinegar Instructions- remove 2 tsp. of adobo sauce from the can of chilis. Add the adobo sauce, maple syrup, chicken broth and cider vinegar to the roasting pan the has the pork drippings. Cook over medium high heat x 5 minutes stirring constantly.
Place pork back in the pan and turn to coat. Slice and serve with your favorite side.
