     Pineapple Cake

Ingredients
Cake
2 cups flour
2 cups sugar
1 cup chopped pecans
2 teaspoons baking soda
2 eggs, beaten
1 teaspoon vanilla
1 can (1 lb. 4 oz) crushed pineapple (DO NOT DRAIN)
 
Icing:
1/2 stick of soft butter
4 oz. softened cream cheese
2/3 cup sifted 10X sugar
1/2 teaspoon vanilla

Instructions
Preheat oven to 350. Combine above ingredients in a large bowl. Mix well by BY HAND!!! Do not use a mixer.
Pour into greased and floured 9” x 13” pan. Bake at 350oF for 45 minutes. Remove from oven and spread with glaze icing while the cake is STILL HOT. Refrigerate overnight.
Beat all ingredients for the icing with an electric mixer. Spread on hot cake. Sprinkle top of cake with more crushed pecans. Cool, cover and refrigerate overnight.
This cake can be frozen, but it also stays fresh in the refrigerator for days.
