     Spinch & Ricotta Gnocchi

Ingredients
Salt and pepper
10 oz package frozen chopped spinach
2 eggs
2 egg yolks
15 oz ricotta cheese
1/4 tsp ground nutmeg
1 cup parmesan cheese, freshly grated
Parmesan cheese, shaved, for garnish
1 cup flour
 
2 tbsp olive oil

Instructions
Heat large covered saucepot of salted water to boiling over high heat.
Meanwhile, thaw and squeeze all liquid from spinach. Chop finely. In large bowl, combine spinach, whole eggs, egg yolks, ricotta, nutmeg, 1/2 tsp salt, 1/4 tsp black pepper, grated parmesan, and flour into very soft dough. On lightly floured surface, gently shape dough into 1/2 inch thick ropes. Cut ropes into 1 inch pieces.
Add gnocchi to pot in batches and cook about 4 minutes per batch or until done. To serve, drizzle with olive oil and top with shaved parmesan.
