     COUNTRY CREAM OF CHICKEN SOUP

Ingredients
1/4 c. oil
1/4 c. finely chopped onion
1/4 c. flour
4 c. chicken broth
2 c. skim milk
1 bay leaf
1 pkg. (10 ounces) frozen whole kernel corn
1 pkg. (10 ounces) frozen cut green beans
1 pkg. (10 ounces) frozen peas
 
1 pkg. (10 ounces) frozen sliced carrots
3 c. frozen hash brown potatoes
1 1/2 c. finely chopped cooked chicken
1/8 tsp. pepper

Instructions
Heat oil in large saucepan on medium heat. Add onion. Cook and stir until tender. Stir in flour. Cook until bubbly. Gradually stir in broth and milk. Cook and stir until mixture is bubbly and slightly thickened. Add bay leaf. Add potatoes, corn, beans, peas and carrots. Increase heat to medium-high. Bring mixture back to a boil. Reduce heat to low. Simmer 5 minutes or until beans are tender. Stir in chicken and pepper. Heat thoroughly. Remove bay leaf. Makes 10 servings.
