     MARY JO'S PINEAPPLE SALAD

Ingredients
1 can (l lb.) crushed pineapple
1/2 c. sugar
1 pkg. lemon Jell-O
1 c. apricot nectar
1 - 8 oz. cream cheese, softened
1 c. finely chopped celery
1/2 c. nuts
1/2 c. maraschino cherries
Cool Whip (about 1/2 of 8 oz. container)
 

Instructions
Boil- pineapple, add sugar and Jell-O. Then add nectar. Let partially set. Whip cream cheese, add remaining ingredients. Fold in cool whip. Sometimes especially in warm weather, I add 1 pkg. unflavored gelatin dissolved in 1/4 c. hot water. Makes a little firmer, especially if you are taking it to a dinner.
