Ingredients
1 1/2 cups all-purpose bread
1 1/2 tsp baking powder
1/4 tsp kosher salt
1 cup warm water
1/2 cup vegetable oil, divided
 

Instructions
1.Blend flour, baking powder, and salt in a bowl Stir in water, and knead dough until soft, adjusting flour or water as necessary. Cover and let dough rest 15-20 minutes. 2. Heat 1/4 cup of the oil in a nonstick skillet over medium-high. Divide dough into 8 pieces and roll on a floured work surface into rounds 4-5 in diameter. Fry in hot oil until puffy and golden on the bottom, then turn and fry on the other side until golden. Drain on a paper towel-lined plate. Fry remaining dough, adding more oil as needed. Serve fry bread warm.
