     Scalloped Sweet Potatoe

Ingredients
3 large sweet potatoes peeled ahd halved cross wise
2 tbsp butter
3/4 cps thinly sliced leeks, white and green parts only
4 tsp flour
1/4 tsp salt
1/4 tsp pepper
1 1/4 cups milk
topping- if deisred
 
1/2 cup fresh bread crumbs
2 tbsp Parmesean cheese
1 tbsp melted butter

Instructions
In a large pot boil salted water, cover and cook sweet potatoes until almost tender, about 15 minutes; drain. Let cool; slice crosswise in thin slices.
In a large saucepan, melt butter over medium heat; cover and cook leek, striring occasionally until tender, about 7 minutes. Stir in flour, salt and pepper; cook, stirring for 1 minute. Slowly stir in milk, cook stirring until evenly thickened about 5 minutes. Stir in Parmesean cheese.
Remove sauce from heat. Gently stir in the sweet potatoes to coat. Arrange sweet potatoes in rows in 8 inch square glass baking dish; spoon any remaining sauce over top.
Top with topping if desired. Combinie Bread crumbs. Parmesean cheese and butter. Bake 425 degrees for about 20 minutes.
