2 bunches romaine, torn (I use, one romaine and one green leaf)
Optional…..chicken strips from KFC or Dillions
rotisserie chicken, or chicken breasts fried and cut into strips
Dressing-
¾ c. olive oil
1/3 c. sugar
1 Tbs. soy sauce
¼ c. red wine vinegar (I sometimes use 3 Tbs. rice vinegar and 1 Tbs. sherry)
Instructions
In a large skillet, melt butter and sugar over medium heat. Add the noodles, sesame seeds and almonds. (discard seasoning packets from noodles or save for another use). Cook and stir for 6 to 8 minutes or until browned; set aside. In a large salad bowl, toss the lettuce and onions. In a tight fitting container, combine the dressing ingredients; shake well. Just before serving drizzle over lettuce/onions. Top with noodle mixture. Toss to coat. 12 servings.
