     Scallops with Pepper

Ingredients
scallops - 3 dry Scottish
olive oil
garlic - 3 cloves unpeeled
tomatoes - 3 small on vine
pepper - black pinch freshly ground
salt - Maldon pinch
lettuce - frisee
lemon - squeeze of juice
 

Instructions
Pat scallops dry, in pan heat olive oil and gently place scallops to sear for 10 seconds. Add garlic and tomatoes and allow scallops to cook. Add freshly ground blakc pepper and maldon salt. Finish scallops with a squeeze of lemon and serve on a bed of frisee lettuce. Sprinkle the left over juices over scallops from the pan.
