     Curn Cake

Preptime   20-25 min.

Ingredients
1 1/2 c. Flour
2 tsp. Baking powder
3 Tbs. Sugar
1/4 tsp. Salt
Sift together, then add
3 Tbs. Shortening
1 Egg
1/2 c. Milk
 

Instructions
Mix just until blended. Stir in 3/4 c. Raisins.
Bake at 350 in well-greased 9" pie pan for 20-25 min.
Remove from oven and slice off top. Carefully remove dome. Dot bottom with margarine and cover with brown sugar. Replace dome and return to oven for 5 min.
Here are a couple recipes (?) I got from your Grandma Coon. She never used a recipe -- she just threw things together, so she told me the ingredients and I went home and experimented and noted the measurements. Each time Jr. would tell me what wasn't quite right and I would change my recipe and mark it "next time try". I knew I had it right when both Virginia and Alice asked me for my recipe for curn cake. Here it is.

Serve warm covered with milk.
