     Caprese Corn Salad

Ingredients
2 ears fresh sweet corn, husked ( about 1 cup)
2 cups halved grape tomatoes
1 cup cubed fresh mozzarella
2 tbsp chopped fresh basil
2 tbsp white wine vinegar
1 tbsp oilve oil
pinch of sugar
salt and black pepper to taste
 

Instructions
Blanch ears of corn 3 minutes in boiling water; drain. When corn is cool enough to handle, cut kernels from cob. Combine tomatoes, mozzarella, basil, and corn in large bowl. Whisk together vinegar, oil, and sugar and season with salt and pepper; toss with corn mixture. Serve salad at room temperature, or chill until ready to serve.
