1/4 cup parsley sprigs

2 Tab salad oil
|
|
2 Tab white wine vinegar
|

2 Tab water
|

1-2 cloves garlic
|
|
1/2 tsp dry mustard
|
|
1/4 tsp salt
|
|
1/4 tsp pepper
|
|
2 oz. fettuccine , broken
|
|
|
|
1 lg carrot, cut into strips
|
|
1 small zucchini, cut thin strips
|
|
1/2 cup frozen peas
|
|
1/2 cup mozzarella or swiss
|

Instructions |
|
|
Dressing-
Blend parsley, oil, wine, water, garlic, mustard, salt and
pepper.
|
|
|
In lg saucepan cook pasta. Add carrots last few minutes.
Drain.
|
|
|
In a lg bowl combine pasta, vegetables and cheese. Add
dressing and toss.
