Ingredients
1/2 cup balsamic vinegar
1/2 cup minced shallots
1/4 cup extra-virgin olive oil
1/4 to 1/2 teaspoon dried crushed red pepper
2 tablespoons drained capers
2 teaspoons fresh thyme leaves
1/4 cup chopped fresh Italian parsley
Instructions
Simmer balsamic vinegar in small pan over medium
heat until reduced to 1/4 cup, about 6 minutes. Add
shallots, EVOO, and crushed red pepper; return to
simmer.
Remove from heat; stir in capers and thyme. Season
vinaigrette with salt and pepper. Be careful
because capers may be salty. Once slightly cooled,
stir in parsley to retain color.
