1 tablespoon vegetable oil

1 medium chopped onion
|

1/2 cup chopped green bell pepper

1/2 cup chopped yellow or red bell pepper

2 cloves garlic, minced
|

1 pound ground turkey or chicken
|

2 – 15 oz cans diced tomatoes
|

2 generous cups pumpkin puree
|
|
2 tablespoons chili powder
|
|
|
|
1 teaspoon ground black pepper
|
|
1 generous dash of salt
|
|
1 – 3.5 oz can chopped green chilies
|
|
1 – 15 oz can corn, drained
|
|
1 - 15 oz can black beans, rinsed
|
|
1/2 cup chopped cilantro
|
|
clamato juice
|
|
cumin to taste
|

Instructions |
|
|
1. Heat the oil in pot over medium heat, and saute the onion,
peppers and garlic until tender. Stir in the turkey, cooking until
brown.

2. Season with chili powder, pepper, salt, and cilantro. Add all
canned items and stir. Add clamato juice to loosen. Add cumin to
taste.

|
|
3. Reduce heat to low, cover, and simmer 20 minutes. Serve
topped with cheddar cheese, sour cream, avocado slices and
tortilla chips.
