     Leftover Roast Beef and Vegetable Soup

Ingredients
Left over pot roast
Bottle of V-8 (or other brand) vegetable juice
Mixed vegetables of your choosing
Beef boullion and other spices you like
 

Instructions
Pour the vegetable juice (V-8) into crock pot.
Add leftover roast beef, cut/shredded into pieces. Add mixed vegetables. If using frozen mixed veggies, be sure to stir to break them up, so they don't clump. Note: You may prefer to rinse the beef if there is any hardened fat on it.
Add beef bullion (I prefer the granules/powder as they dissolve nicely), pepper, and any other spices you prefer. Suggestions are basil, thyme, garlic powder, etc. No measurements, whatever your taste prefers.
Let cook on low all day. There really are no real directions. It's a great way to have leftover pot roast with out feeling like you're eating the same ol' leftovers.
Serving Suggestions
Great with warm bread or corn muffins (our favorite!) Leftovers can be frozen; warms well.
