     Salsa de tomatillo verde (Green tomatillo sauce)

Ingredients
2 Tbsp vegetable oil
large onion, chopped
Canned Mexican green tomatoes (tomatillas)
2 canned green chillies, drained and chopped
finely chopped cilantro leaves
1 cup chicken stock
 

Instructions
Heat the oil in a small frying pan. Add the onion and fry until it is soft. Remove from the heat.
Put the onion, tomatoes and can juice, chillies and cilantro leaves into a blender and blend to a smooth puree. Pour into a saucepan and set over low heat. Gradually add the chicken stock, stirring constantly. Cook until the sauce comes to the boil. Reduce the heat to low and simmer the sauce for 5 minutes.
The sauce is now ready to be added to other ingredients or to be served.
