1 1/2 cups sweetcorn kernels (defrosted if frozen)
1/2 cup flour
2 Tbsp sugar
2 eggs lightly beaten
2 Tbsp grated parmesan cheese
1/4 cup salsa or salsa rojo
sufficient oil for deep frying
Instructions
Combine the corn, flour, sugar, seasoning, eggs, cheese and salsa until they are thoroughly blended. Set aside.
Fill a large deep frying pan one third full with iol and heat until it reaches 360 degrees on a deep fat thermometer (or until a drop of water sizzles). Carefully lower a few tablespoons of the mixture into the oil and fry for 3 - 4 minutes. Turn fritters over for 1 more minute until they are golden brown. Using a slotted spoon, transfer the fritters to kitchen towels to drain. Deep hot while you cook the remaining mixture in the same way.
Transfer the fritters to a warmed serving dish, and serve at once.
