     CHERRY PUDDING CAKE

Ingredients
2 c. flour
2 1/2 c. sugar, divided
4 tsp. baking powder
1 c. milk
2 Tbs. vegetable oil
1/8 tsp. almond extract
2 cans water-packed pitted tart cherries, drained
2 to 3 drops red food coloring, optional
whipped cream or ice cream, optional
 

Instructions
In a mixing bowl, combine flour, 1 c. sugar, baking powder, milk, and oil; pour into greased 3 qt. baking dish. In a bowl, combine cherries, food coloring if desired, extract and remaining sugar. Spoon over batter. Bake at 375 degrees for 40-45 minutes or until a wooden pick inserted in the cake portion comes out clean. Serve with whipped cream or ice cream if desired.
