     SALSA

Ingredients
1 large bunch cilantro, stems removed, (chopped)
10 jalepino peppers
30 firm roma tomatoes
1 large white onion
1/2 tsp sea salt
1/2 tsp fresh ground pepper
 

Instructions
Wash peppers, slice in half and partially remove seeds.(the more seeds you remove, the milder it will be.) Wash tomatoes and slice in quarters Peel and wash onion and slice in 6 pieces Using a hand driven salsa grinder, begin chopping peppers first. If grinder is hard to rotate, remove some of the peppers. Empty into large bowl often. Next add onions and follow same process. Empty onions into large bowl with jalepinos and begin a small batch of tomatoes. and add cilantro (stems removed) to tomatoes.Cilantro is easier to chop when added with tomatoes. Continue with process until done. Add Sea salt and fresh ground pepper, to your individua taste. Chill at least 4 hours.Serve with tortilla strips or use with other recipes
SPECIAL NOTES For best results, don't use a food processor or blende. Roma tomatoes are dense and flavorful, better for keeping shape when chopping.
