     ZUCHINNI BREAD

Ingredients
3 cups all-purpose flour
1 tsp. salt
1 tsp. bakingsoda
1 tsp. baking powder
3 tsp.cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cup sugar
3 tsp vanilla extract
 
2 cups grated zuchini
1 cup walnuts OR pecans

Instructions
Grease and flour two 8 x 4 in. loaf pans. Preheat oven to 325 degrees.
Sift flour, salt, baking powder and soda and cinnamon together in a bowl.
Beat eggs, oil, vanilla and sugar in a large bowl or mixer bowl. Add sifted ingredients and mix well (will be thick). Stir in zucchini and nuts until well combined. Pour batter into pans.
Bake for 45- 60 minutes until tester inserted comes out clean. Cool in pan on rack for 20.min . Remove bread from pan and completely cool.
