     White Chicken Chili

Ingredients
1 1/2 teaspoons garlic powder
1 1/2 teaspoons cumin
3/4 teaspoon dried oregano
1 tablespoon olive oil
1 - 1 1/4 lbs boneless, skinless chicken breats, cooked and cut into 1/2 inch cubes
1/2 cup chopped onion
1 (14 1/2 oz) can fat-free chicken broth
1 (4 1/2 oz) can chopped green chiles
1 bay leaf
 
2 (15 oz) cans rinsed and drained cannellini (white kidney) beans
Shredded Monterey Jack cheese for garnish

Instructions
Combine garlic powder, cumin and oregano in a small dish and blend; set aside. Heat oil in a large nonstick skillet over medium-high heat. Add chicken and onion; cook 4-5 minutes or until chicken is lightly browned, stirring often. Stir in chicken broth, chiles, mixed spices and bay leaf. Simmer on low heat 15 minutes. Stir in beans and simmer 5 minutes. Remove bay leaf. Top with shredded Meontery Jack cheese.
