     Chicken Enchilada

Ingredients
12 - 7 in flour tortillas, cut into quarters
2 cups chicken or turkey, chopped
1 lb Monterey Jack cheese, shredded
1 cup sour cream or plain Greek yogurt
1 can cream of chicken soup, condensed
1 cup onion, chopped
1 cup celery, chopped
4 oz can green chiles, chopped
2 Tbsp butter
 

Instructions
Sauté celery and onion in butter until tender. Add chicken or turkey and chiles. In a separate bowl, mix together sour cream and soup.
Spread a very thin layer of soup mixture a lightly greased 9x13 baking pan. Layer 1/2 the tortillas, chicken filling, soup mixture and cheese. Repeat layers (saving larger half of soup and cheese for the top layer).
Bake at 350 degrees for 30-40 mins. or until golden on top.
