     Chicken or Shrimp- Gyros with Herbed Yogurt Spread

Ingredients
3 lbs. unpeeled, medium fresh shrimp or boneless chicken breasts
4 T. Greek seasoning
4 T. olive oil
6 (12-inch) wooden skewers
8 (8-inch) pita rounds or gyros
HERBED YOGURT SPREAD
1 c. plain low-fat yogurt
2 garlic cloves, minced
 
1 1/2 tsp. dried oregano
2 tsp. chopped fresh mint
4 tsp. lemon juice
1/2 tsp. pepper
1 cucumber, peeled and chopped
ACCOMPANIMENTS
1 large tomato, chopped
1 large cuke, thinly sliced
2 c. crumbled feta

Instructions
For herbed yogurt spread- Whisk together all ingredients. Chill up to 8 hours.
For chicken gyros, cut chicken into bite-sized pieces. For shrimp- no prep. Combine Greek seasoning and olive oil in plastic zipper bag. Add chicken or shrimp. Seal and marinate for 30 minutes.
Soak wooden skewers in warm water for 10 minutes. Skewer chicken or shrimp. Grill chicken until cooked through, or shrimp until it turns pink.
Wrap each pita in damp cloth and microwave 10-15 seconds or until soft and warm. Spread one side of each pita round with herbed yogurt spread. Top evenly with chicken or shrimp. Add accompaniments and enjoy!
