     Soup- Kathy's Wild Rice

Ingredients
2/3 c. uncooked wild rice
2 T. butter
1 T. minced onion
1/4 c. flour
1 quart chicken broth
1/3 c. shredded carrot
1/3 c. diced celery
1/3 c. fresh sliced mushrooms
1 c. half-and-half
 
2 T. sherry
Fresh parsley

Instructions
Cook wild rice according to package directions.
Melt butter in 4-quart pan and saute onion. Blend in flour. Gradually add broth and cook, stirring constantly, until slightly thickened.
Stir in rice, salt, carrot, celery and mushrooms. Simmer for 5 minutes.
Add cream and sherry. Heat through. Garnish with parsley and serve.
