1) Coat tofu pieces with cornmeal, then fry the tofu
in a thin layer of oil until tofu is golden brown.
Remove from pan and set on paper towels to absorb
excess oil.
2) Remove excess grease from pan, then saute the
green onions for about three minutes. Remove from
pan and set aside for later.
3) Combine peanut butter, soy sauce, brown sugar,
lime juice, ginger, garlic and water. Stir until
flavors begin to fuse, about 2 minutes. Heat the
sauce in a small pot and thin out by slowly adding
more water. The sauce will be finished when it's
a nice orangey-colour.
4) Place tofu back in pan, then add sauce over top
and coat the tofu pieces with the sauce. The
longer the sauce is in the pan, the more it will
thicken up, so add more water if necessary. Serve
tofu atop brown rice, then top the tofu with the
sauteed green onion. Sprinkle on salt and pepper to taste, as
well as the sesame seeds and red pepper flakes.
