     Cajun Crawfish Cornbread

Preptime   1 1/2 hrs

Ingredients
2 c cornmeal
2/3 c oil
2 cans cream style corn
1 tsp baking powder
1/2 c jalapenos chopped
2 lbs crawfish tails cut in half
2 med onions chopped
16 ozs shredded chedar cheese
6 eggs well beaten
 

Instructions
Combine all ingredients. Mix well. Pour into 2 well oiled iron skillets or 9 x 13 baking pan. Bake for 55-60 minutes or until golden brown. Makes 2 skillets or 1 9 x 13 pan.
