     Turkey Meatloaf

Ingredients
1.5 cups chopped yellow onions
2 Tbls olive oil
1 tsp kosher salt
1 tsp freshly ground black pepper
1 tsp fresh thyme leaves ( 1/2 tsp of dried)
1/3 cup Worcestershire sauce
3/4 cup chicken stock or broth made from bullion cubes
1 1/2 tsp tomato paste
2.5 pounds ground turkey breast
 
3/4 cups plain dry bread crumbs
3 eggs
4 Tbls brown sugar
4Tbls mustard
2/3 cup ketchup

Instructions
preheat oven to 325 degrees In a medium saute pan, over medium-low heat, cook the onion, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature. Combine the ground turkey, bread crumbs, eggs and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. In a seperate bowl, combine brown sugar, mustard and ketchup. Mix well and pour over meatloaf. Bake for about 1 hour or until internal temperature is 160 degrees F. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.)
