     TURKEY FRAME SOUP

Category   Salads - Soups - Sidedishes
Sub Category   Holiday Dish
Servings   An Army
Preptime   1 hour

Ingredients
1 Meaty Turkey Frame
12 cups of water
1 onion, chopped
2 teaspoons of salt
16 oz. can of tomatoes, chopped
1 tablespoon chicken bouillon granules
1 tablespoon of oregano
1 teaspoon of thyme, 1/2 teaspoon of garlic powder
1/8 teaspoon pepper

4 cups fresh vegetables (any combination of sliced carrots, celery, mushrooms)
4 cups chopped onions, rutabagas, broccoli, cauliflower
1 1/2 cups medium egg noodles (or more)

Instructions
Break turkey frame in half. Place in large pot with water, onion and salt. Bring to boil, reduce heat, cover and simmer for 1-3 hours. the more you simmer the richer the flavor.
Remove turkey frame and debone when cool. Chop meat. Discard bones - strain broth if you think some bones are still in the broth. To the broth add undrained tomatoes, bouillon granules, spices and veggies. Bring to a boil then reduce to a simmer. Cover and cook 1 hour or more.
When ready to eat, stir in uncooked noodles, chopped turkey and simmer uncovered for 8-10 minutes or until the noodles are done.
Note- You can add any vegetables you have including fresh chopped tomatoes. I like a really hearty soup so by the time I add the noodles there is not much broth. You can always thin it out with more broth if you like it to be soupier.
Serving Suggestions
Saltine Crackers. This tastes so wonderful after you have been stuffing yourself with turkey and dressing for days.
