     Bisquick Meat (or Chicken) Pie

Ingredients
3 cups (appx) cubed meat or shredded chicken
1 ½ cups beef or chicken broth
¼ cup (half stick) butter, melted
2 cups Bisquick
1 ½ cups milk
1 can cream of mushroom or cream of chicken soup
1 bag (1 ½ cups appx) mixed frozen vegetables. Allow to thaw about 30mins.
2 beef or chicken bouillon cubes
Pepper and/or paprika
 

Instructions
Preheat oven to 350°. If you’re preparing a beef dish use all beef ingredients, otherwise all chicken. Warm stock in small sauce pan and add bouillon cubes to dissolve. Keep warm until ready
Lightly coat 9 X 13 baking or round casserole dish. Pour in melted butter. Brown beef (I use cut up stewing meat) or boil chicken to shred. Layer meat or chicken on top of butter in baking dish. Sprinkle on the veggies.
In mixing bowl combine milk and Bisquick (it’s okay if there are a few lumps). Pour over beef or chick and vegetables. DO NOT STIR! Sprinkle with black pepper as desired. WARNING- Don’t do this ahead of time as Bisquick 'sets up' very quickly.
Combine soup of choice with warm stock. Slowly pour over Bisquick layer. Again, DO NOT MIX! It’ll be a big, soupy mess but don’t worry, it’s supposed to look like that. Lightly sprinkle with paprika, if desired. Bake 40-45mins for 9X13 dish, till top is brown and bubbly. If using round dish bake 50-55mins. Remove from oven and let rest 5mins.
Serving Suggestions
It’s hard to find a side dish, as most everything is in this main meal. Perhaps yams.
