     Vegetable soup with Chorizo Meatballs

Ingredients
pearl onions
garlic/raw and roasted
zucchini
shredded carrots
red pepper
chorizo sausage
hot sausage
cilantro
baby spinach
 
celery
beef broth
chicken broth
ground cumin
mushrooms(portabella)
green onion
pasta(baby shells)
tomato

Instructions
Preheat the oven to 400 degrees.Mix the hot sausage and the chorizo in a bowl. Then take the meat mixture a make into small meatballs; line a cookie sheet with foil,less clean up,place the meatballs on the cookie sheet spaced enough so that they are not touching. The meatballs will shrink when cooked. Place in the oven for 30-40 min, check on them around 25 min, you want them to be a little brown on top;the meatballs will cook longer in the soup. Before placing the meat balls in the oven, take a small piece of foil take a small bulb of garlic cut the very top off of the thing, place in the center of the foil and pour a little olive oil over the garlic, at salt and pepper a ground cumin on top, wrap up the foil so that the garlic can roast in the oven. Place the meatballs and garlic in the oven both will be ready at the same time!
Next you prep all of the vegetables.Took make things go quick you can use already shredded carrots, already cut mushrooms.Take you celery about 2 stalks cut then as big or as small as you would like, just remember that you want to keep you vegetables the same size.For the pearl onions you need to get the skin off, use can boil some watter in a small pot and drop the onions in let them cook for like 4 min, run under some cold water and the skin should peel right off. You can use a medium size whole onion and just dice it. Next cut the red pepper into the same size pieces as the celery.Cut the roma tomatoes in half and cut out the core and seed them.Cut into a small dice.Chop a handful of cilantro;then mince 4 toes of garlic.
