     Frito Chile Pie (Al's Chili)

Ingredients
2 tablespoons vegetable oil
2 cups chopped onion
salt
cayenne
2 pounds stew meat
1 tablespoon chili powder
2 tablespoons cumin
crushed red pepper
2 teaspoons dried oregano
 
2 tablespoons chopped garlic
3 cups crushed tomatoes
1 can tomato paste
2 cups beef stock
1 cup dark red kidney beans
1 bag frito chips
1 1/2 cups monterey jack cheese grated
6 tablespoons sour cream
1 small jar jalapeno pepper sliced

Instructions
In a large saucepan heat the vegetable oil. When the oil is hot, brown stew meat until all water is gone. Add the onions and bellpepper and saute for 3-5 minutes, or until they wilt. Season with salt and pepper. Add the chili powder, cumin, crushed red pepper, oregano and the garlic. Add the tomato paste and stire to brown slightly. Add tomatoes, beef stock and beans.
Bring the mixture to a boil and reduce to simmer. Simmer the liquid uncovered for 1 hour, stirring occasionally or until the beef is tender. Skim off the fat if any. Reseason with salt and pepper.
Place a handful of chips in each shallow bowl. Spoon the chili over the chips. Garnish with grate cheese, sour cream and jalapenos.
