Brown meat, spoon off fat. Add next six (6) ingredients. Simmer uncovered 30 min to blend flavors, stirring occasionally.
Combine Rigotta, eggs, seasonings and parm cheese.
Place half cooked noodles in a 13x9x2 pan. Spread half of the cheese mix over. Add half of the mozzerella cheese and half of the sauce. Repeat layers. Cook in oven at 375 degrees for one (1) hour.
Garnish with triangles of mozz. cheese, and pepperoni. Let stand 15 mins. before cutting. Filling will set.
