     Jean's Lasagna

Ingredients
1 pound sausage or ground beef
1 clove minced garlic
1 tbsp parsley
1 tbsp basil
1 1/2 tsp salt (optional)
1 can (1#) tomatoe puree
2 (6oz) cans, tomatoe paste
1 pkg. 10oz lasagna noodles (cooked)
3 cups rigotta cheese
 
2 eggs (beaten)
2 tsp salt (optional)
1/2 tsp pepper
2 tbsp parsley flakes
1/2 cup grated parmesian cheese
1 lb Mozzarella, sliced very thin
sliced pepperoni (optional)

Instructions
Brown meat, spoon off fat. Add next six (6) ingredients. Simmer uncovered 30 min to blend flavors, stirring occasionally.
Combine Rigotta, eggs, seasonings and parm cheese.
Place half cooked noodles in a 13x9x2 pan. Spread half of the cheese mix over. Add half of the mozzerella cheese and half of the sauce. Repeat layers. Cook in oven at 375 degrees for one (1) hour.
Garnish with triangles of mozz. cheese, and pepperoni. Let stand 15 mins. before cutting. Filling will set.
Serving Suggestions
I have used jar sauce, doctored with seasonings (basil, oregeno, garlic), WARNING: Use the correct size pan! Unlike Andy...MESSY NEW OVEN!!
