     hearty mushroom barley soup

Ingredients
2 Tbsp oil
2 large onions, finely chopped
1-1/2 to 2 lb cholent meat or roast cut into small cubes
1 frozen garlic cube
2 large carrots thinly sliced
24 oz (6 cups) fresh mushrooms sliced
3/4 cup raw barley
16 cups water
1/4 cup soy sauce
 
1 Tbsp chicken soup mix
1 Tbsp salt
1 tsp pepper

Instructions
in a large stock pot, saute onion in oil until golden (10-12 mins)
add the meat cubes and saute another 3 minutes
add the garlic, carrots and mushroom and saute another 2 minutes
then add barley, water, soy sauce and seasonings and simmer for at least 5-6 hours
Serving Suggestions
this is my new yom tov soup and it freezes well!
