Ingredients
4 cups whole milk
1 1/3 cup sugar
12 egg yolks
1/2 cup bourbon
1 cup chilled heavy cream
grated nutmeg
 

Instructions
In a saucepan, whisk milk and sugar until sugar dissolves, over medium heat - about 1 to 2 minutes. In a bowl, whisk the yolks thoroughly. Then whisking constantly, slowly pour the hot mixture into the yolks in a constant stream. If you pour too much in too fast, you will scramble the eggs. Going slow allows you to temper the eggs.
Return the mixture to a pan and cook over medium heat for 20 to 25 minutes, or until mixture coats the back of the spoon. Do NOT simmer.
Strain mixture into a bowl. Stir in bourbon and cream. Cool completely, and then cover with plastic wrap, put in fridge and chill. Garnish with grated nutmeg when ready to serve.
