     Soup- Potato Leek

Ingredients
3 lbs. medium potatoes
3 leeks, chopped (6 c.)
6 T. butter (can omit)
6-8 c. chicken broth
1 c. half-and-half
Salt, pepper, chives, sour cream to garnish
 

Instructions
Peel and cube potatoes.
Wash, trim and chop leeks, using as much of green tops as possible. Melt butter, then add leeks, cooking until wilted.
Add potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
Add half-and-half and heat through before serving.
