combine yeast, sugar, and 1/2 cup warm water and set in warm place for 5 minutes. Add 2 cups warm water, 3 cups rye flour, melted shortening and caraway seed. mix well with a wooden spoon, cover with waxed paper and let rise in warm place for 3 hours. Dough will be bubbly on top.
Add remaining flour and salt. mix well, then knead on bread board thoroughly, kneading in more flour if necessary, so it is not sticky. Form into a large ball, return to a greased bowl and sprinkle lightly with flour. Cover adn let rise about 1 3/4 hours or until light and doubled in size.
turn out onto board and knead out bubbles. Form into a round or 2 long loaves and place on floured baking pan. Brush top with melted butter and pierce with a fork. Let rise about 30 more minutes.
Bake in 350 degree over for about an hour, or until light golden brown. Brush crust with water when finished baking (for a harder crust) or with melted butter (for a softer crust).
