Crust- Mix the flour and salt in a medium sized bowl with a fork. Then, cut the shortening into the flour/salt mixture until it resembles course crumbs. (Do this by taking 2 knives and cutting the shortening in a criss-crossing motion) Next, sprinkle 5-6 tbsp. of ice cold water into the mixture stirring in 1 tbsp. at a time. Add the ice cold water until the dough is just moist enough to form a ball. After this, divide the large ball into 2 smaller equal-sized balls. Roll one of the balls out flat, and then put it into the well greased pie pan.

Filling- Start by putting all of the peeled and sliced apples into a medium or large bowl. Add cinnamon, sugar, flour, and butter/margarine(if desired). Mix it all together. Then let it sit for a bit while you roll out the other ball of dough. After rolling the second ball, pour the apple mixture into the pie crust already in the pan (trying to get as much juice as possible). Then place the second piece of dough on top of the pie. Using your pointer and thumb pinch the dough together around the edges, and then cut off any dough that hangs over the edge. Cut a few lines onto the top crust of the pie. Finish it by sprinkling some cinnamon and sugar on the top.
