     Self-crusting Corn Quiche

Ingredients
1 large onion
1 T butter
2 cooked potatoes, cubed (can just cook in microwave prior)
1/2 C milk
3 eggs
1/2 tsp salt
1/4 C self-raising flour
440g can creamed corn
1 C grated tasty cheese
 
1 tomato, sliced thinly (optional)

Instructions
Cook the onion in the butter until tender but not brown (can do in microwave). Add the cubed potato. Mix the milk, eggs, salt and flour until blended. Combine with the onion mixture, the creamed corn and cheese and pour into 23cm metal pie plate or solid-bottomed flan dish. Put thin slices of tomato in a circle on top.
Bake at 210C for 20-30 minutes or until filling is set in the centre.
Serving Suggestions
Serve warm in wedges.
